Extremely tasty and just as billed with a whole lot of veggies and just a bit of protein. Plenty of room for a small tortilla and taco sides. Everyone at the table was happy. I did it in the oven in two pans. The bottom with aluminum and covered with aluminum for 20 min at 425 degrees. Then I took off the top aluminum cover and left them open to bake some more for another 15 min. Just right.

Ingredients for 6 Servings
- 1 pound chicken breast
- 5 cups sweet potatoes
- 5 cups red bell peppers
- 1 large red onion, sliced
- 1 clove garlic, minced
- 1 teaspoon salt
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon dried oregano
- 1 small lime, cut into 6 wedges
Preparation for Chicken and sweet potato grill packets
1Preheat grill to medium-high. Cut six 12-inch lengths of heavy-duty foil. Coat each piece with cooking spray. 2Combine chicken, sweet potatoes, peppers, onion, garlic, salt, chili powder, cumin and oregano in a large bowl; stir to coat thoroughly. 3Evenly divide the chicken mixture among the foil sheets. Gather together the long ends of each foil piece, then fold up its open ends to form a packet. 4Cook until the vegetables are tender and lightly charred, turning halfway through, about 20 minutes total. Serve right away (be careful of steam when opening the packets), with lime wedges.
